Can you think of anything better than an ooey, gooey, chewy cookie? Cookies are the go-to for rough patches, sweet cravings, dessert with lunch, and snack with a tall glass of ice cold milk. I’m a bit choosey on my cookies, and peanut butter has always been my favorite. These aren’t just any peanut butter cookies, though. These are my mother’s easy peanut butter cookies that were the most requested sweet from all the grandkids…and me, too. I made these a lot with my son as my helper (my little sous chef, if you will), which helped spawn his love for cooking.

The secret to why these cookies are so soft and chewy is the cake mix. There are only four ingredients, so it couldn’t be easier and chances are you have them in your pantry, already. Just add the ingredients to a mixing bowl and let the mixer do the work. Make sure the ingredients mix well, then roll a small amount into a ball using your hand. At this point, you’re going to want to taste that cookie dough. I can’t blame you because I usually take a few tastes, myself. I warn you; it’s addictive and not a good idea, either, since it contains raw eggs.
I made the criss-cross marks using a fork dipped in cold water. The cold water keeps the fork from sticking I the cookie dough. This recipe can easily be adapted to other types of cookies. Is your sweet tooth aching, yet?
Oh, my gosh, these are so yummy. They look beautiful, they tastes delicious, and take little time to make. I can easily get lost in these cookies and eat the whole bunch, but that wouldn’t’ be wise. Peanut Butter Cookies
Yield 24 cookies
These delicious peanut butter cookies are chewey, flavorful, and perfection to the palate.
- 1 cup peanut butter
- 1 box yellow cake mix
- 1/2 cup oil
- 2 Tbsp water
- 2 eggs
- Preheat oven to 350 degrees.
- Combine all ingredients and mix well. Roll out into balls and place on cookie sheet.
- Press with fork dipped in cold water to form criss-cross pattern.
- Bake 10 to 12 minutes or until golden brown. Let cool.
Quick tip: Dipping a fork in cold water will help keep the fork from sticking to the cookie dough.
