Being from the South, nothing tastes better than banana pudding. It’s the food of the Gods and is reserved for special occasions. When done right, it contains a lot of ingredients, a lot of calories and takes extra care, time, and love to make it. BUT! I have a healthy vegan alternative that is incredible. This is one delicious banana pudding, and it’s vegan, gluten-free, Paleo, dairy-free, healthy, and it takes just over 5 minutes to make without going near a stove — how easy is that?!
Who loves dessert for breakfast? Of course, I wish I could have dessert with every meal, and now I can. This healthy vegan banana pudding is easy and healthy enough to have as a breakfast dish. I’m a huge fan of smoothies and take one with me to work every morning. This recipe can easily be converted to a smoothie by simply blending in a blender for 1 minute.
This banana pudding is a little high in calorie and fat due to the white chia seeds, but the health benefits far outweigh the caloric intake. Chia seeds are promoted as a weight-loss aid and are believed to reduce the risk of cardiovascular disease. Most of the calories in the chia seeds are from heart-healthy polyunsaturated, omega-3 and monounsaturated fatty acids. Chia seeds also contain a lot of fiber and B vitamins. With the delicious taste and natural benefits from the chia seeds, bananas, walnuts, and cinnamon, I’d call this a win-win, wouldn’t you?
You will need to soak the chia seeds for this recipe and freeze the bananas. I used to just put the bananas in a bag and freeze them. The skin darkened and had to be cut before peeling off the banana. It is so much easier to peel the bananas and half them before putting them in a plastic freezer bag, which is what I do, now. This recipe also calls for cinnamon, and I highly suggest grinding fresh cinnamon as opposed to buying pre-ground cinnamon. The scent of the freshly ground cinnamon will knock your socks off, and the taste is incredible.

Healthy Vegan Banana Pudding
Yield 4 servings
Vegan, gluten-free, Paleo, no-cook banana pudding -- how easy!
- 2 tbsp white chia seeds
- 4 medium frozen bananas, halved
- 2/3 cup walnut halves
- 1/2 tsp ground cinnamon
- 1/2 tsp pure vanilla extract
- 1 cup original flavor rice milk
- Place the chia seeds in a container and add 2/3 cup water. Cover and place in the refrigerator overnight to soak.
- Place all the ingredients in the order listed into a blender and blend for 20 seconds.
- Garnish with banana slices.
Quick tip: To freeze bananas, peel and halve the bananas and place in a plastic, freezer bag.
